The renovation includes an unveiling of the lobby space, designed by Boston-based interior design firm, Jinnie Kim. Marseilles Hotel South Beach, located on 1741 Collins Avenue, is capping off a multi-year, ten million dollar renovation of its historic property with a tropical oasis poolscape guaranteed to bring a whole new look and feel to the Art Deco gem. Visitors will get an instant sense of escape and total immersion into the South Beach way of life. Slated for completion in Spring 2015, the new aqua playground includes a complete remodeling of the 1,600 square foot heated pool and the addition of a 333 square foot dipping pool. Guests can get a bird’s eye view of the surrounding paradise and wide sandy beach from a high-flying, 18’ tall nest swing, which comfortably seats four. A third rectangular pool showcases floating platform beds for the adjacent four private bungalows. Surrounding tropical foliage was created by landscape architect Matthew D. Bukolt of Kimley-Hom, one of the country’s premier design consulting firms. The secluded area includes native Silver Buttonwood trees and Coconut Palms that complement the Brazilian Walnut sun decks. A Southeast Asian concept launched by Menin Hospitality, Red Ginger will be located in the South of Fifth neighborhood in South Beach. Byblos, is set to officially open mid-April 2015 at 1535 Collins Avenue in the heart of Miami Beach’s hottest dining destination. The 200-seat restaurant is poised to bring diners the vibrant and exciting flavors of the Eastern Mediterranean and quickly become part of Miami’s blossoming culinary scene. Chef Brad Kilgore can now add “chef-owner” to his business card: He is opening Alter restaurant next year in Miami’s Wynwood arts district. Kilgore, 28, plans to serve progressive American cuisine from a 65-seat indoor-outdoor space at 223 NW 23rd St., around the corner from Panther Coffee, Freshii and Coyo Taco. The interior dining room will feature a four-seat chef’s counter facing the kitchen, and organic garden beds outside will provide herbs and produce. Unlike Kilgore’s previous Miami fine-dining stints, most recently at J&G Grill at the St. Regis Bal Harbour and before that at Azul at the Mandarin Oriental Miami, he says he wants Alter’s atmosphere to be casual and its prices to be less than those at special-occasion restaurants. Look for apps in the $10-17 range and entrées maxing out at $30.

The Pubbelly Boys are opening a new-American restaurant, PB Station, early 2015 in downtown Miami. Located at 121 SE First St., on the ground floor of the former Miami National Bank building and what will be the boutique Langford Hotel, the newest from the Pubbelly Restaurant Group will draw inspiration from two previous concepts: PB Steak and PB Fish, a dual steakhouse-fish shack that closed in August.  Look for dishes like the PB Steak tartare sliders and the PB Fish ceviche taquitos on the PB Station menu, in addition to new steak and seafood choices, when the restaurant opens. Executive chef Guillermo Concha will lead the kitchen, working in seasonal plates that he creates in tandem with Pubbelly culinary director Jose Mendin.
